There are few dishes more elegant than Beef Wellington. This savory recipe combines beef loin, mushroom duxelles is wrapped in puff pastry and served with a red wine sauce. It looks like a million dollars and tastes like heaven. NOTE: We have limited orders of Beef Wellington available this year. Unfortunately, we are requesting that you only order one per customer to ensure everyone gets to order should they desire.

Scallion Crusted-Arctic Char with Pineapple Salsa (DF, NF, SF) *PC

Fresh steelhead trout coated in a panko-scallion mix and gently sautéed in extra-virgin olive oil until golden crusted and finished with pineapple salsa.

Recommended: Pear, Fennel and Parmesan Salad


Wild Card:

Louisiana Blackened Shrimp over Boursin Polenta (NF,SF) **PC

Wild-caught jumbo shrimp are cooked to perfection and tossed on blackening seasoning (not spicy). We serve it up over a creamy polenta spiked with Boursin cheese!

Something Simple:

Chicken Pesto Over Angel Hair Pasta (F) (NF,SF)

I normally prepare this dish in the summer whenever I have an abundance of basil growing in my garden. It is also good in the colder months as a light yet filling pasta dish. We prepare our pesto in house without any nuts so that all can partake in the deliciousness! We garnish it with roasted tomatoes and basil! Yum! NUT-FREE

Recommended Side: Grilled Seasonal Vegetables w/ Charred Lemon

Parmesan Risotto (F) ( NF, SF)

The extra starch in Arborio rice gives risotto its creamy texture; here Parmesan cheese makes it even creamier which makes it a perfect pairing with the Marry Me chicken!


Truffle and Mustard Hasselback Potatoes (F) (GF,NF,SF)

Thinly sliced and roasted potatoes are always a crowd-pleaser! Here we roast them at a higher temperature than normal for a crispy crust and dark golden exterior, but still moist inside. We toss them in a mix of herbs, grain mustard, and truffle oil to make a delectable side dish.



Asian Pear, Fennel and Parmesan Salad (GF, SF)

The method of preparing this salad — paper-thin shavings of fennel, usually raw, tossed together and lightly dressed just before serving — is resulting in an always fresh and satisfying salad. We also use Asian pear so they don’t turn brown.


Grilled Seasonal Vegetables with Charred Lemon Aioli (GF,DF,NF)

Healthy and delicious! Marinaded squash, asparagus, bell pepper, sweet potatoes, and red onion are charred on the grill, tossed in herbs, and served with a charred yuzu for a smokey and fresh kick!


Maquechoux (F) (GF, NF, SF)

Pronounced "MOCK SHOE", this is a dish that the Cajuns got from the Native American tribes that populated southwest Louisiana. It's a wonderful corn-based dish mixed with 4-5 vegetables.



(F) = you can freeze that dish if needed. My meals will last for 5-6 days and they do not need to be frozen. I indicate which meals are freezable in case you want to save it for later.
